I've made this stuffed chicken several times and thought that it was about time that I share the recipe with all of you. It's easy to make, most of the ingredients are things you probably already have, and both David and I think it's delicious. Hope that you all think the same!
- 6 tbsp olive oil
- 4 cloves of garlic, minced
- 6 oz feta cheese
- 4 tbsp chopped rosemary, preferably fresh but dried will work also
- 1/2 tsp cayenne pepper
- 1 tsp white pepper
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- 1/2 cup flour, lightly salt and peppered
- 2 boneless skinless chicken breasts, butterflied to make 4 half breasts
- 4 strips bacon
- Baker's twine, a toothpick will also work
Preheat your oven to 400 Fahrenheit.
Sautee garlic in 2 tbsp of olive oil over medium heat for 1 minute.
Crumble feta cheese with a fork and mix with sautéed garlic (with olive oil), rosemary, cayenne pepper, white pepper, and balsamic vinegar. Add salt and pepper to taste.
Dredge the chicken in flour mixture and shake the excess off.
Lightly brown the chicken in 4 tbsp of olive oil over medium-high heat, about 1-2 minutes on each side.
Double each chicken breast over itself and stuff with feta cheese mixture. Wrap with bacon and secure with twine. Garnish with a rosemary sprig, if you'd like.
Bake for 25-30 minutes.
