Bekuh's yummy vegetarian pasta primavera

Hi there beautiful Musings readers, my name is Bekuh and I blog over at Secondhand Sundays. I'm happy to be guest posting while Lena is busy settling into a new home, and a new country. Nothing says home to me like a hardy home cooked meal, so today I'm going to share my recipe for Vegetarian Pasta Primavera. This is a great dish for the coming fall months as the temperatures start to cool off, but produce can still be found fresh and in plenty.

Vegetarian Pasta Primavera: Serves 4
Ingredients:
12 cherry tomatoes
1 small zucchini
1 small yellow squash
1 onion
3 cups milk
1/2 stick butter
1/2 cup flour
1lb penne
2 cloves garlic
1-2 cups shredded italian blend cheeses
Olive Oil
Parmesan to taste
Salt & pepper to taste

Start by bringing a large pot of water to boil. While you wait for the water to boil, roughly chop up your veggies and garlic. When the water starts to boil add your pasta and cook for 8-12 minutes, until al dente. In a skillet heat 2 tablespoons of olive oil and add all of your veggies, and garlic, except for the tomatoes. Cook, seasoning with salt and pepper, until soft. Add the tomatoes and continue cooking until everything is slightly browned.

Either empty the skillet you were preparing the veggies in or grab another to make the cream sauce. Start by making a roux; melt the butter in the skillet on medium high, then add the flour, mixing until a paste is formed. Add the milk, lower the heat, and stir constantly until the sauce begins to thicken and the paste has dissolved. If the sauce is too thick add more milk, too thin add more flour. Mix in the shredded cheese, salt and pepper to taste, and remove from heat. Your dinner is now ready to serve.

To serve, scoop pasta in a bowl, add the cream sauce and veggies on top and sprinkle with parmesan cheese. I recommend a nice red wine to drink and someone you love beside you.
