During my time there, I was introduced to this glorious and wonderful world of chai drinking ... which I now have an obsession with [I'm not ashamed]. My fellow Indians taught me the art form of making this cozy drink and I want to share the incredibly valuable skill with you. It may change your life ... seriously.
So, I invite you to share in this delight that is chai. I'm aware that much easier methods exist to make that hot cup of joy [you know, like a tea bag], but [trust me] there's no comparison to the chai making ways of India's beautiful people.
Chai
2 cups water
1/2 TSP ground cloves
1/4 TSP cardamon
Sprinkle of cinnamon
Dash of black pepper
Loose leaf black tea
[around 2 TBSP]
[tea bags will work, I use loose leaf because the flavor is most similar to what I experienced]

1 TBSP Sugar
Cream or milk [if you're wanting to be a bit healthier]
Combine spices with water. Bring water to a boil.
Fill mugs or thermos 3/4 of the way full and seep black tea for 30 seconds to a minute.
[If you're using tea bags, you may have to seep them for a bit longer for the same robust flavor that the loose leaf teas provides.]
Add sugar.
Fill mugs or thermos to capacity with milk.
Stir to ensure sugar is dissolved.
Enjoy as you sip on the flavors of the Indian Himalayas
A little note: the best chai is when you find the exact mix of spices and sugar. This recipe is what I love most, but you can add more cloves for it to be a bit spicier or seep the tea longer for bitterness. This drink is all about the perfect combination of ingredients for your happy place.
